Live a Sweet Life with Diabetes (Diabetic Desserts)

Living with diabetes equals to no desserts for most of us. But it is not as tough as it sounds. All you need is regular workout, a proper diet plan, a positive attitude, and you can enjoy desserts to your heart’s content.

To make living with diabetes sweeter, Freshmen’s Valley has brought together few interesting recipes that can be easily eaten by diabetic people. We are sure you will not be able to wait to try them out!

Baked Creamy Custard

Ingredients

  • 2 cups milk
  • 1 vanilla bean, split
  • 2 eggs
  • 2 egg yolks
  • 1/2 teaspoon flour
  • 3 tablespoons saccharin, or aspartame, or Splenda

Instructions

  • Preheat the oven to 325°F.
  • Heat the milk and vanilla bean in a saucepan over medium-high heat until almost boiling. Remove from the heat, cover, and set aside to infuse for 15 minutes.
  • Whisk together whole eggs, egg yolks, 3 tablespoons sugar substitute, and flour in a bowl.
  • Bring the milk back to a boil, then remove the vanilla bean, and whisking constantly slowly pour the hot milk over the egg mixture. Strain the mixture into a pitcher, then divide among six standard ramekin dishes that have been coated with cooking spray.
  • Set the ramekins in a shallow roasting pan and pour enough hot water into the pan to come halfway up the sides of the ramekins. Bake for about 30 to 35 minutes, or until the custard is lightly set. The custards should be slightly wobbly in the center as they will continue to cook for a few minutes after being removed from the oven.
  • After cooling, refrigerate, and serve with any fruit on top.

Mocha Ricotta Tiramisu

Ingredients

  • 8 ladyfingers, halved
  • 1 teaspoon instant espresso powder
  • 1/2 cup boiling water
  • 2 tablespoons brandy
  • 1 teaspoon saccharin, or aspartame, or Splenda
  • 1 cup low-fat ricotta cheese
  • 1 cup plain low-fat yogurt
  • 1/4 cup sifted confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 1 ounce semi-sweet dark chocolate, grated

Instructions

  • Break each ladyfinger biscuit into 3 pieces, then place evenly among four dessert glasses.
  • Place coffee in a mug and add the boiling water. Add the brandy and 1 teaspoon sugar, and stir until it dissolves. Pour evenly over the ladyfingers. Leave to soak while you prepare the topping.
  • Whisk the ricotta with yogurt, confectioners’ sugar, and vanilla extract until smooth and creamy. Pile on top of the soaked ladyfinger biscuits.
  • Sprinkle the top of each dessert with grated chocolate. Cover and chill for at least 60 minutes before serving.

Vanilla Chia Pudding

Ingredients

  • 1/4 cup cooked quinoa
  • 2 tablespoons chia seeds
  • 2 tablespoons hemp hearts
  • 1/4 teaspoon vanilla powder
  • 2 tablespoons saccharin, or aspartame, or Splenda
  • Pinch of cinnamon
  • 3/4 cup almond milk
    Vanilla Chia Pudding

Instructions

  • Add all ingredients to a jar and stir together. Tighten lid and place chia pudding in the fridge to set for about 2 hours.
  • Serve chilled.

Beets, Apple & Oats Halwa

Ingredients

  • 2 red apples, peeled and grated
  • 1 beetroot, peeled and finely grated
  • 1/4 cup rolled oats, roasted
  • 1 cup milk
  • 2 tablespoons saccharin, or aspartame, or Splenda
  • 1 teaspoon cardamom powder
  • 2 tablespoons ghee
  • Few melon seedsInstructions
  • In a deep bottomed pan, bring the milk to boil and cook the apple and beetroot till they soften.
  • Add the oats to it and cook till the halwa is almost dry.
  • Mix in the sugar substitute, cardamom powder and ghee to the almost dry halwa. Cook until the ghee separates.
  • Serve hot, garnished with melon seeds or sliced nuts.

Peach Tea Punch

Ingredients

  • 2 bags of peach flavor tea
  • 100 ml fresh peach juice
  • 50 ml fresh orange juice
  • 150 ml boiling water
  • 1 teaspoon lemon juice
  • 1 teaspoon maple syrup or stevia
  • 1/4 teaspoon cinnamon powder + black pepper powder
  • Mint leaves, for garnishing

Peach Tea Punch

Instructions

  • In a mug, pour boiling water over tea bags, cover and let steep for 5 minutes.
  • Remove the tea bags and let the tea cool down.
  • Stir in the remaining ingredients.
  • Serve over ice, garnished with mint leaves.

These recipes are easy to make, with easily available ingredients, and won’t harm your sugar levels if taken in moderation.
